Dear Friends

Welcome to the wonderful world of maple syrup. Whether you are newto this delicious natural nectar, or are well versed in its uses, we think you will enjoy our collection of recipes.

We find most of our friends are unaware of the many different uses of maple syrup, other than the tried and true 'pancakes and syrup'. One of my favourite treats as a child was 'maple milk'. This is just like 'chocolate milk', but as we were maple producers, maple syrup was always available!

Another one of my favourite childhood memories was going into the sugarhouse, just before bed, to say goodnight to my father, who had a long night of boiling syrup ahead of him. The sugarhouse at night had a whole different feel than the 'daytime sugar house'. It seemed nearly magical. I suppose this had more to do with being allowed to stay up a little later and going outside in your pajamas!

The sugarhouse was warm and had a wonderful sweet smell. Our big treat was to have a tablespoon of nearly finished syrup, warm out of the finishing pan. To this day this continues to be a big treat for my children, although it seems to me that their grandfather gives them many more 'tasters' than we were given!

I don't mean to run on with my childhood tales, but rather to share with you the magic of maple syrup.
